Steps
1. Preheat the oven to 200°C (400°F).
2. In a small bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
3. Rub the chicken breast with the garlic herb mixture and let it marinate for 10 minutes.
4. Toss the mixed vegetables with olive oil, salt, and pepper.
5. Place the marinated chicken breast on a baking tray and surround with the vegetables.
6. Roast in the oven for 20-25 minutes or until the chicken is cooked through and vegetables are tender.
7. Serve hot with a squeeze of lemon juice if desired.
