Steps
1. Preheat your oven to 400°F (200°C).
2. Wash and dry the potatoes, then cut them into wedges.
3. In a bowl, toss the potato wedges with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
4. Spread the potatoes evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for 30-35 minutes, turning halfway through, until golden and crispy.
6. Remove from oven and garnish with fresh parsley if desired. Serve hot.
