Steps

1. Preheat oven to 400°F (200°C). 2. Wash and dice the potatoes into evenly sized cubes. 3. In a bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. 4. Spread the potatoes evenly on a baking sheet lined with parchment paper. 5. Roast for 30-35 minutes, turning once halfway through, until golden brown and crispy. 6. If using, sprinkle Parmesan cheese over the potatoes in the last 5 minutes of baking. 7. Remove from oven, let cool slightly, and serve warm.
