Steps
1. Rinse the mussels under cold water, removing any beards and discarding any that are open and do not close when tapped.
2. Heat olive oil in a large pan over medium heat. Add minced garlic and shallot, sautéing until fragrant and translucent, about 2 minutes.
3. Pour in the white wine and bring to a simmer.
4. Add the mussels to the pan and cover with a lid. Steam for 5-7 minutes, shaking the pan occasionally, until all mussels have opened.
5. Discard any mussels that remain closed.
6. Sprinkle chopped parsley over the mussels and season with salt and pepper.
7. Serve immediately with crusty bread to soak up the flavorful broth if desired.
