- Heat the vegetable oil in a pan over medium-high heat.
- Add the minced ginger and garlic, sauté for about 1 minute until fragrant.
- Add the sliced chicken breast to the pan, season with salt and pepper, and cook until browned and cooked through, about 5-6 minutes.
- Stir in the broccoli, bell peppers, and carrots; cook for another 3-4 minutes until vegetables are tender-crisp.
- Mix honey and soy sauce in a small bowl, then pour over the chicken and vegetables.
- Stir well to coat everything evenly and cook for another 1-2 minutes until the sauce thickens slightly.
- Remove from heat, sprinkle with sesame seeds if using, and serve hot.
