Ginger Lemongrass Chicken Noodle Bowl

Steps

1. In a bowl, mix the grated ginger, minced garlic, chopped lemongrass, soy sauce, salt, and pepper. Marinate the chicken thigh in this mixture for at least 15 minutes. 2. Cook the rice noodles according to package instructions. Drain and set aside. 3. In a pan, heat the vegetable oil over medium heat. Add the marinated chicken thigh and cook for about 6-7 minutes on each side until golden brown and cooked through. 4. Remove the chicken from the pan, let it rest for a few minutes, then slice it thinly. 5. In the same pan, add the cooked noodles and toss them in the remaining oil and drippings for 1-2 minutes. 6. Serve the noodles in a bowl topped with the sliced chicken, green onion, and fresh cilantro.
