
Steps
- Preheat your grill or grill pan to medium-high heat.
- Brush the chicken breast with olive oil and season with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, place the peach halves cut side down on the grill for 2-3 minutes until grill marks appear.
- Remove the chicken and peaches from the grill; let them rest for a couple of minutes.
- Slice the grilled chicken and peaches.
- In a bowl, toss the mixed greens with lemon juice, olive oil, salt, and pepper.
- Top the salad with sliced grilled chicken, peaches, and feta cheese if using.
- Serve immediately and enjoy your meal!
