Steps
1. Toast the biscuits in the oven or in a toaster.
2. Bring a small pot of lightly salted water to a boil and drop in the eggs. Simmer for 6 minutes and then quickly place in an ice water bath to chill.
3. In a medium bowl, combine the washed lettuce, lemon juice, yogurt, olive oil, salt and pepper.
4. Peel and slice the soft-boiled eggs.
5. Top the toast with the lettuce mixture and eggs.
6. Serve and enjoy!
