Greek Greens & Eggs

A Mediterranean flavored breakfast dish made with toasted bread, soft boiled eggs, romaine lettuce and a lemony yogurt dressing.

Steps

1. Toast the biscuits in the oven or in a toaster. 2. Bring a small pot of lightly salted water to a boil and drop in the eggs. Simmer for 6 minutes and then quickly place in an ice water bath to chill. 3. In a medium bowl, combine the washed lettuce, lemon juice, yogurt, olive oil, salt and pepper. 4. Peel and slice the soft-boiled eggs. 5. Top the toast with the lettuce mixture and eggs. 6. Serve and enjoy!

• 2 slices of whole grain bread • 2 soft-boiled eggs • 2 cups of washed romaine lettuce • 1 small lemon • 2 tablespoons of plain Greek yogurt • 1 tablespoon of olive oil • Salt and pepper to taste
