Grilled Avocado with Shrimp

A delicious and healthy grilled avocado dish topped with succulent shrimp. Perfect for a light and satisfying main course.

Steps

1. Preheat grill to medium-high heat. 2. Cut the avocado in half and remove the pit. Score the flesh in a crisscross pattern. 3. In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and pepper. 4. Brush the avocado halves with the marinade mixture. 5. Grill the avocado halves flesh side down for 3-4 minutes or until grill marks appear. 6. Meanwhile, toss the shrimp with the remaining marinade. 7. Add the shrimp to the grill and cook for 2-3 minutes per side or until they turn pink and opaque. 8. Remove the avocado halves and shrimp from the grill. 9. Place the avocado halves on a serving plate and fill the center with the grilled shrimp. 10. Garnish with fresh cilantro. 11. Serve immediately and enjoy!
