
Steps
- Preheat grill to medium heat.
- Brush the corn with olive oil and season with salt and pepper.
- Grill the corn for 8-10 minutes, turning occasionally, until lightly charred.
- Remove the corn from the grill and let it cool slightly.
- Cut the kernels off the cob and transfer to a mixing bowl.
- Add the cherry tomatoes, cucumber, red onion, cilantro, lime juice, salt, and pepper.
- Toss everything together until well combined.
- Serve the grilled corn salad chilled or at room temperature.
