Steps
1. In a bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper to create the marinade.
2. Cut the chicken breast into bite-sized pieces and add to the marinade. Toss to coat well. Let it marinate for at least 30 minutes in the refrigerator.
3. Preheat the grill to medium-high heat.
4. Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating between ingredients.
5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
6. Remove from the grill and let rest for a few minutes before serving.
