Grilled Octopus with Lemon Herb Dressing

Steps

1. Clean the octopus and remove the beak if needed. 2. Bring a pot of water to boil and simmer the octopus for 45 minutes until tender. Drain and cool. 3. Cut the octopus into bite-sized pieces. 4. In a bowl, mix olive oil, minced garlic, lemon juice, parsley, smoked paprika, salt, and pepper. 5. Toss the octopus pieces in the lemon herb dressing and marinate for 15 minutes. 6. Preheat the grill or grill pan over medium-high heat. 7. Grill octopus pieces for 3-4 minutes on each side until slightly charred. 8. Serve immediately with lemon wedges.
