
Steps
- Preheat your grill or grill pan over medium heat.
- Brush the peach halves and chicken breast with olive oil, and season with salt and pepper.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink inside.
- During the last 2-3 minutes of cooking, add the peach halves to the grill cut-side down and grill until caramelized, about 2-3 minutes.
- Remove the chicken and peaches from the grill and let them rest for a few minutes.
- Slice the chicken and peaches.
- In a large bowl, toss the mixed greens with balsamic vinegar.
- Top the greens with sliced chicken and peaches. Optionally, sprinkle crumbled feta cheese on top.
- Serve immediately and enjoy your delicious salad!

- 2 cups mixed greens (arugula, spinach, or your choice)
- 1 tablespoon olive oil
