Steps
1. Preheat the grill to medium-high heat.
2. Season the chicken breast with olive oil, salt, and pepper.
3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
4. During the last few minutes of grilling, add the peach halves cut-side down to the grill and cook until slightly charred, about 2-3 minutes.
5. Remove the chicken and peaches from the grill and let them rest for a few minutes.
6. In a small bowl, whisk together balsamic vinegar, honey, and a pinch of salt.
7. Slice the grilled chicken and peaches.
8. In a bowl, arrange the mixed greens, top with sliced chicken, grilled peaches, and feta cheese (if using).
9. Drizzle the balsamic dressing over the salad and serve immediately.
