Steps
1. Preheat grill to medium-high heat.
2. Season the chicken breast with salt and pepper, then grill for 6-8 minutes per side until cooked through. Let it rest for a few minutes, then thinly slice.
3. Cut the peaches in half and remove the pits. Brush the cut sides with olive oil and grill for 2-3 minutes per side until lightly charred. Slice the grilled peaches.
4. In a large bowl, combine the mixed salad greens, sliced chicken, sliced peaches, crumbled feta cheese, and chopped fresh mint.
5. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle the dressing over the salad and toss to coat.
