Steps
1. Preheat your grill or grill pan over medium heat.
2. Season the chicken breast with salt, pepper, and a drizzle of olive oil.
3. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest.
4. While the chicken is resting, grill the peach halves cut-side down for about 3-4 minutes until caramelized.
5. In a small bowl, whisk together olive oil, balsamic vinegar, honey (if using), and a pinch of salt and pepper to make the dressing.
6. Slice the grilled chicken and peaches.
7. In a bowl, toss the mixed greens with the dressing, then top with sliced chicken, grilled peaches, and crumbled feta cheese if desired.
8. Serve immediately and enjoy!
