Steps

1. Preheat the oven to 375°F (190°C). 2. Cut the bell pepper in half lengthwise and remove seeds and membranes. 3. Heat olive oil in a pan over medium heat. Add onion and garlic; sauté until translucent. 4. Add ground beef, cumin, salt, and pepper; cook until beef is browned and cooked through. 5. Stir in diced tomato and cooked rice; cook for 2 more minutes. Remove from heat and mix in chopped cilantro. 6. Stuff each bell pepper half with the beef and rice mixture. 7. Top with shredded cheese. 8. Place stuffed peppers in a baking dish and bake for 15-20 minutes until the peppers are tender and cheese is melted. 9. Serve warm and enjoy your healthy Colombian meal!
