
Steps
- Preheat your oven to 375°F (190°C).
- Season the chicken breast with olive oil, rosemary, thyme, salt, and pepper on both sides.
- Place the chicken on a baking sheet and bake for 25-30 minutes until fully cooked and golden brown.
- While the chicken is baking, peel and chop the potato into small chunks.
- Boil the potato in salted water for about 15 minutes until tender.
- Drain the potato and return it to the pot. Add the minced garlic, butter, and milk.
- Mash until creamy and smooth, seasoning with salt and pepper to taste.
- Serve the herb-crusted chicken on a plate with a generous scoop of garlic mashed potatoes.
