Steps
1. Preheat your oven to 375°F (190°C).
2. Season the chicken breast with olive oil, rosemary, thyme, salt, and pepper on both sides.
3. Place the chicken on a baking sheet and bake for 25-30 minutes until fully cooked and golden brown.
4. While the chicken is baking, peel and chop the potato into small chunks.
5. Boil the potato in salted water for about 15 minutes until tender.
6. Drain the potato and return it to the pot. Add the minced garlic, butter, and milk.
7. Mash until creamy and smooth, seasoning with salt and pepper to taste.
8. Serve the herb-crusted chicken on a plate with a generous scoop of garlic mashed potatoes.
