Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix the Dijon mustard, olive oil, rosemary, thyme, salt, and pepper.
3. Brush the mustard mixture over both sides of the lamb chops.
4. Heat a skillet over medium-high heat and sear the lamb chops for 2 minutes on each side.
5. Transfer the lamb chops to a baking dish and bake in the preheated oven for 8-10 minutes for medium-rare.
6. Meanwhile, boil the cubed potatoes in salted water until tender, about 15 minutes.
7. Drain the potatoes, and return them to the pot.
8. Add the minced garlic, butter, and milk to the potatoes, mashing until smooth and creamy.
9. Season the mashed potatoes with salt and pepper to taste.
10. Serve the lamb chops alongside the garlic mashed potatoes, garnished with fresh herbs if desired.
