Steps
1. Preheat the oven to 400°F (200°C).
2. In a bowl, combine the breadcrumbs, parsley, rosemary, thyme, garlic, salt, and pepper.
3. Rub the lamb chops with olive oil and then coat them evenly with the herb mixture.
4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes per side until browned.
5. Transfer the lamb chops to a baking sheet and roast in the preheated oven for 8-10 minutes for medium-rare or until desired doneness.
6. While the lamb chops are cooking, prepare the mint sauce by combining the mint leaves, Greek yogurt, lemon juice, honey, and salt in a small bowl.
7. Once the lamb chops are cooked, let them rest for a few minutes before serving with the mint sauce.
