1. Preheat your oven to 400°F (200°C). 2. In a small bowl, mix olive oil, rosemary, thyme, salt, and pepper. Rub this mixture all over the chicken breast. 3. Place the chicken on a baking sheet and roast in the oven for 25-30 minutes until fully cooked. 4. While the chicken is roasting, peel and chop the potato.
