Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix olive oil, rosemary, thyme, salt, and pepper. Rub this mixture all over the chicken breast.
3. Place the chicken on a baking sheet and roast in the oven for 25-30 minutes until fully cooked.
4. While the chicken is roasting, peel and chop the potato. Boil in salted water for 15-20 minutes until tender.
5. Drain the potato and return to the pot. Add crushed garlic, butter, and milk. Mash until smooth and creamy.
6. Once the chicken is done, let it rest for a few minutes before slicing.
7. Serve the sliced chicken alongside a generous scoop of garlic mashed potatoes.
