
Steps
- Preheat your oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the rabbit leg and let it marinate for 15 minutes.
- In a baking dish, place the sliced carrot and zucchini.
- Add the marinated rabbit leg on top of the vegetables.
- Pour the vegetable broth into the baking dish.
- Cover with foil and roast for 45 minutes.
- Remove the foil and roast for an additional 15 minutes to brown the rabbit.
- Let it rest for 5 minutes before serving with a lemon wedge.
