Herb-Roasted Rabbit with Garlic and Vegetables

This succulent herb-roasted rabbit dish is infused with garlic and accompanied by vibrant seasonal vegetables. Perfect for a cozy dinner, it combines rustic flavors with a touch of elegance.

Steps

1. Preheat your oven to 180°C (350°F). 2. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the herb mixture all over the rabbit leg, ensuring it's well coated. 4. In a skillet, heat a little olive oil over medium heat and brown the rabbit leg on all sides for about 5 minutes. 5. Transfer the rabbit leg to an oven-safe dish and add the sliced carrots and zucchini around it. 6. Pour the broth into the dish. 7. Cover with foil and roast in the oven for 45 minutes. 8. Remove the foil and roast for an additional 15 minutes to crisp the skin. 9. Let it rest for a few minutes before serving, garnished with fresh parsley.
