Steps
1. Preheat the oven to 375°F (190°C).
2. In a bowl, mix olive oil, thyme, rosemary, salt, and pepper.
3. Rub the herb mixture over the turkey breast.
4. Place the turkey in a baking dish and roast for 25-30 minutes until cooked through.
5. Meanwhile, peel and chop the potatoes, then boil them in salted water with garlic for about 15 minutes.
6. Drain the potatoes, then mash with butter and milk until smooth.
7. Serve the turkey breast sliced, alongside the creamy garlic mashed potatoes.
