Steps

1. Preheat the oven to 425°F (220°C). 2. Wash and dice the potatoes into 1-inch cubes. 3. In a bowl, toss the potato cubes with olive oil, minced garlic, rosemary, salt, and pepper until evenly coated. 4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper. 5. Roast for about 25-30 minutes, turning halfway through, until golden brown and crispy. 6. Remove from the oven and sprinkle with fresh parsley before serving.
