Steps
1. In a bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper.
2. Rub the herb mixture over the lamb chops and let them marinate for at least 30 minutes.
3. While the lamb is marinating, boil the cubed potato in salted water until tender, about 15-20 minutes.
4. Drain the potatoes and return them to the pot. Add butter, milk, and salt, then mash until smooth.
5. Heat a skillet over medium-high heat. Cook the lamb chops for about 4-5 minutes on each side for medium-rare, adjusting time based on your preferred doneness.
6. Plate the lamb chops and serve with a generous scoop of garlic mashed potatoes on the side.
