Steps
Preheat oven to 400°F (200°C).
In a small bowl, mix honey, olive oil, lemon juice, minced garlic, soy sauce, salt, and pepper.
Place the chicken breast in a baking dish and brush with half of the honey mixture.
In another bowl, toss broccoli, carrots, and potato with a tablespoon of olive oil, salt, and pepper. Arrange around the chicken.
Bake for 20 minutes, then brush chicken with remaining honey glaze.
Continue baking for another 10-15 minutes until chicken is cooked through and vegetables are tender.
