Steps
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix honey, soy sauce, salt, and pepper to create the glaze.
3. Place the chicken breast in a baking dish and brush half of the honey glaze on top.
4. Chop the seasonal vegetables and toss them in olive oil, salt, and pepper, then arrange them around the chicken in the baking dish.
5. Brush the remaining glaze over the vegetables.
6. Bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
7. Garnish with fresh thyme before serving.
