Steps
1. Peel and dice the potato into 1/2 inch cubes.
2. Crack the eggs into a bowl and whisk with a fork until completely mixed together.
3. Heat a frying pan over medium heat and add olive oil.
4. Once the oil is hot, add the potatoes and fry until cooked through, then season with garlic powder, salt and pepper.
5. Add the eggs and mix with the potato until cooked through, about 2 minutes.
6. Serve and enjoy!
