
Steps
- Start by preparing the ingredients. Place the cubed chicken in a medium bowl and season with a pinch of salt and pepper. Slice or dice the onions and place them aside.
- Heat a large skillet over medium-high heat with 1 teaspoon of olive oil. Add the chicken to the skillet and cook for 4-5 minutes, flipping the chicken halfway through. Once chicken is cooked through, transfer it to an individual plate.
- Add onions and another teaspoon of olive oil to the same skillet and cook for 2-3 minutes, stirring occasionally.
- Add uncooked rice to the skillet and stir everything together until the rice is well-mixed in with the onions. Pour soy sauce and yogurt over the top of the rice, stirring constantly.
- Finally, add the cooked chicken back into the skillet and stir everything together until it is well-combined. Cook for 2-3 minutes or until the rice is cooked through.
- Serve warm and enjoy!
