Steps

1. Preheat your oven to 200°C (400°F). 2. Toss the sliced carrots with half of the olive oil, salt, and pepper, then spread them on a baking sheet. 3. Bake the carrots for 15 minutes. 4. While the carrots are baking, season the fish fillet with dill, salt, and pepper. 5. After 15 minutes, add the fish to the baking sheet with the carrots and drizzle with the remaining olive oil. 6. Bake for an additional 10-12 minutes, or until the fish is cooked through and flakes easily. 7. In a bowl, combine the cucumber slices, lemon juice, salt, and pepper. Toss to coat. 8. Serve the fish and roasted carrots alongside the cucumber salad, garnished with fresh parsley if desired.
