Koosu Poriyal (Spiced Bamboo Shoot Stir-Fry)

Koosu Poriyal is a traditional South Indian stir-fry made with tender bamboo shoots and aromatic spices. This dish is lightly sautéed with mustard seeds, curry leaves, and grated coconut, making it a flavorful and healthy side for any meal.

Steps

1. Peel and boil the bamboo shoots until tender. Drain and cut into thin strips. 2. Heat oil in a pan over medium heat. 3. Add mustard seeds and cumin seeds; let them splutter. 4. Add dry red chili and curry leaves; sauté for a few seconds. 5. Add the boiled bamboo shoots and turmeric powder; mix well. 6. Add salt to taste and stir-fry for 5-7 minutes. 7. Add grated coconut and mix thoroughly. 8. Cook for another 2 minutes, then turn off heat. 9. Serve hot as a side dish with rice or chapati.
