Lemon Herb Chicken and Rice

Steps

1. Rinse the rice under cold water until the water runs clear. 2. In a saucepan, heat olive oil over medium heat and add the minced garlic. Cook until fragrant. 3. Add the rice to the saucepan, stirring to coat it with the oil and garlic. 4. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a boil. 5. Season the chicken breast with oregano, thyme, salt, and pepper. 6. Place the chicken breast atop the rice mixture, reduce heat to low, and cover. 7. Cook for 20 minutes or until the rice is tender and the chicken is cooked through. 8. Remove from heat and let it sit, covered, for 5 minutes. 9. Fluff the rice with a fork, slice the chicken, and garnish with chopped parsley before serving.
