Steps

1. In a small bowl, mix olive oil, lemon juice, lemon zest, oregano, salt, and pepper. 2. Marinate the chicken breast in this mixture for at least 15 minutes. 3. Preheat a grill pan or skillet over medium heat. 4. Grill the chicken for 6-7 minutes each side or until fully cooked. 5. Let the chicken rest for 5 minutes, then slice. 6. In a plate, arrange mixed salad greens, cherry tomatoes, and cucumber. 7. Top the salad with sliced chicken and sprinkle with feta and parsley. 8. Drizzle any remaining marinade as a light dressing and serve immediately.
