Steps
1. In a bowl, mix olive oil, lemon juice, cumin, paprika, salt, and pepper to create the marinade.
2. Add the chicken breast to the marinade and let it sit for at least 30 minutes.
3. Preheat the grill to medium-high heat.
4. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
5. While the chicken is grilling, prepare the quinoa salad by combining cooked quinoa, diced cucumber, cherry tomatoes, parsley, and pomegranate seeds in a bowl.
6. Drizzle with lemon juice, and season with salt and pepper to taste.
7. Once the chicken is done, let it rest for a few minutes before slicing.
8. Serve the grilled chicken on a plate alongside the quinoa salad.
