A delicious and healthy Japanese-inspired snack that is low in carbs. This snack combines the flavors of carrots, corn, mushrooms, and potatoes, with a touch of sweetness from honey.

Steps: 1. Peel and slice the carrot into thin sticks. 2. In a pot of boiling water, cook the corn kernels for 2-3 minutes, then drain and set aside. 3. Slice the mushrooms and dice the potato into small cubes. 4. In a non-stick pan, sauté the mushrooms and potato cubes until they are golden brown. 5. Add the carrot sticks and corn kernels to the pan, and drizzle with honey. Stir well to coat all the veggies. 6. Cook for an additional 2-3 minutes, until the flavors are well combined. 7. Remove from heat and let cool slightly before serving.
