- Peel and slice the carrot into thin sticks.
- In a pot of boiling water, cook the corn kernels for 2-3 minutes, then drain and set aside.
- Slice the mushrooms and dice the potato into small cubes.
- In a non-stick pan, sauté the mushrooms and potato cubes until they are golden brown.
- Add the carrot sticks and corn kernels to the pan, and drizzle with honey. Stir well to coat all the veggies.
- Cook for an additional 2-3 minutes, until the flavors are well combined.
- Remove from heat and let cool slightly before serving.
