Steps
1. Heat olive oil in a non-stick skillet over medium heat.
2. Add minced garlic and chopped onions, and sauté until fragrant and onions are translucent.
3. Add grated carrots and cook for another 2 minutes.
4. Add white beans to the skillet and stir well to combine with the veggies.
5. Create a well in the center of the skillet and crack the eggs into it.
6. Gently scramble the eggs, incorporating them with the beans and veggies.
7. Cook until eggs are set but still slightly runny.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy!
