
Steps
- Cook the corn in boiling water for 5 minutes. Once cooled, cut the kernels off the cob.
- Dice the cucumber, red onion, and cherry tomatoes.
- In a bowl, combine the corn, cucumber, red onion, and cherry tomatoes.
- Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Toss everything together until well coated.
- Serve chilled and enjoy!
