Steps
1. Cook the corn in boiling water for 5 minutes. Once cooled, cut the kernels off the cob.
2. Dice the cucumber, red onion, and cherry tomatoes.
3. In a bowl, combine the corn, cucumber, red onion, and cherry tomatoes.
4. Drizzle with olive oil and lemon juice. Season with salt and pepper.
