Steps
1. Rinse the lentils under cold water and set aside.
2. In a medium pot, heat olive oil over medium heat.
3. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
4. Add the diced carrot and celery, and cook for another 5 minutes.
5. Stir in the diced tomato, cumin, paprika, and dried oregano, and cook for 2 minutes.
6. Add the rinsed lentils and vegetable broth to the pot.
7. Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender.
8. Season with salt and pepper to taste.
9. Serve hot, garnished with fresh parsley if desired.
