Steps
1. Season the chicken breast with salt, pepper, and dried oregano.
2. Heat olive oil in a skillet over medium heat.
3. Add the chicken breast and cook for 5-6 minutes per side until golden and cooked through.
4. Remove chicken and set aside.
5. In the same skillet, add minced garlic and sauté for 1 minute.
6. Add diced tomato and sliced olives, cook for 3-4 minutes until tomatoes soften.
7. Return chicken to the skillet, spoon olive and tomato mixture over the top, and warm through for 2 minutes.
8. Garnish with fresh parsley and serve immediately.
