Steps
1. In a medium bowl, whisk together the eggs.
2. Heat olive oil in a small nonstick skillet over medium heat.
3. Sauté the red onion until softened, about 5 minutes.
4. Add olives and sauté for 30 seconds.
5. Add the egg mixture, parsley, and season with salt and pepper.
6. As the omelette sets, use a spatula to gently lift the edges and tilt the pan to allow the uncooked egg to flow underneath.
7. Cook for 5 minutes.
8. Reduce heat to low and fold the omelette in half.
9. Cook for another 4 minutes.
10. Carefully slide the omelette onto a plate and enjoy.
