Steps
1. Preheat the air fryer to 200°C (390°F).
2. In a bowl, mix the olive oil, paprika, cumin, salt, and pepper. Add the chicken breast and coat well. Let it marinate for 10 minutes.
3. Place the marinated chicken in the air fryer basket and cook for 15 minutes, flipping halfway through.
4. Meanwhile, toss the chickpeas, diced bell pepper, and zucchini with a pinch of salt and pepper. Add them to the air fryer for the last 10 minutes of the chicken cooking time.
5. Once done, let the chicken rest for a few minutes before slicing.
6. Serve the sliced chicken over the roasted chickpeas and vegetables, garnished with fresh parsley and a squeeze of lemon.
