
Steps
- Preheat the oven to 375°F (190°C).
- Cut the top off the bell pepper and remove seeds and membranes.
- In a bowl, mix quinoa, olives, feta cheese, cherry tomatoes, oregano, salt, and pepper.
- Stuff the bell pepper with the mixture.
- Drizzle olive oil over the stuffed pepper.
- Place the pepper in a baking dish and bake for 25-30 minutes, or until the pepper is tender.
