Mexican Style Rice with Monterey Jack Cheese

This creamy dish is an incredible combination of flavors and textures. The aroma of the Mexican spices will make this main course a party pleaser!

Steps

1. Heat the olive oil in a pot over medium heat. 2. Add the chopped onion and bell pepper to the pot and cook for 4-5 minutes. 3. Add the rice, cumin, chili powder, garlic powder, salt and pepper to the pot and mix until evenly combined. 4. Increase the heat to high, pour 2/3 cups of water and bring the mixture to a boil. 5. Once boiling lower the heat and let the mixture simmer for 10 minutes. 6. Turn off the heat, cover the pot with a lid and let it sit for 10 more minutes. 7. Transfer the rice to a plate, sprinkle with the cheese and serve.
