
Steps
- Heat the olive oil in a pot over medium heat.
- Add the chopped onion and bell pepper to the pot and cook for 4-5 minutes.
- Add the rice, cumin, chili powder, garlic powder, salt and pepper to the pot and mix until evenly combined.
- Increase the heat to high, pour 2/3 cups of water and bring the mixture to a boil.
- Once boiling lower the heat and let the mixture simmer for 10 minutes.
- Turn off the heat, cover the pot with a lid and let it sit for 10 more minutes.
- Transfer the rice to a plate, sprinkle with the cheese and serve.

- 1/2 cup of rice
- 1/4 cup red onion, chopped
- 1/4 cup bell pepper, chopped
- 1 tsp olive oil
- 1/2 tsp of cumin
- 1/2 tsp of chili powder
- 1/4 tsp of garlic powder
- 1/4 cup of Monterey Jack cheese, shredded
- Salt and pepper to taste
