Steps
1. In a bowl, mix olive oil, minced garlic, chopped mint, salt, and pepper. Rub this marinade over the lamb chops and let them sit for at least 30 minutes.
2. Preheat the oven to 400°F (200°C).
3. Toss the sliced vegetables with olive oil, salt, and pepper. Spread them on a baking sheet.
4. Place the marinated lamb chops on another baking sheet.
5. Roast the vegetables for 20-25 minutes and the lamb chops for 15-20 minutes, or until desired doneness.
6. Serve the minted lamb chops with the roasted vegetables.
