Mojo Chicken and Vegetables

This marinated Cuban-style chicken dish is packed with savory flavor and includes a side of onions and tomatoes for a perfect balance of texture and flavor.

Steps

1. Marinate chicken in orange juice, lime juice, garlic, onion powder, cumin, oregano, paprika, and pepper for 30 minutes. 2. Heat olive oil in a skillet over medium-high heat. 3. Add chicken and cook for 5-7 minutes on each side, until cooked through. 4. Remove the chicken from the pan and set aside. 5. Add onions and tomatoes to the same skillet and cook 4-5 minutes. 6. Add chicken back in pan and season with salt and pepper to taste. 7. Cook another 3 minutes, stirring occasionally, until the chicken and vegetables are nicely cooked and well combined. 8. Serve and enjoy!

• ½ lb chicken breast • 1 onion, diced • 2-3 tomatoes, diced • 2 tsp olive oil • 2 tsp garlic, minced • 2 tsp onion powder • ¼ cup orange juice • 2 tbsp lime juice • 2 tbsp cumin • 1 1/2 tsp oregano • 2 tsp paprika • 1 tsp white pepper • 1 tsp coriander • Salt & pepper to taste
