Cuban Ropa Vieja

Ropa Vieja is a traditional Cuban dish made with shredded beef, peppers and onions. It's a great way to use a leftover roast and enjoy a flavorful dinner.

Steps

1. Heat the olive oil in a large skillet over medium heat. 2. Add the onion and bell peppers and cook for 4-5 minutes, until softened. 3. Add the garlic, cumin, oregano, and paprika and cook for 1 minute. 4. Add the tomato sauce, beef broth, and shredded beef and stir to combine. 5. Simmer for 10 minutes, stirring occasionally. 6. Add the salt, pepper, cilantro, and parsley and stir to combine. 7. Serve over cooked rice or with warm tortillas.
