Steps

Preheat oven to 200°C (400°F). Pat the chicken breast dry and season with salt and pepper. Mix Dijon mustard, olive oil, honey, and dried thyme in a small bowl. Brush the mustard mixture evenly over the chicken breast. Sprinkle panko breadcrumbs over the top for extra crunch (optional). Place the chicken on a baking tray lined with parchment paper. Bake for 20-22 minutes, or until the chicken is cooked through and juices run clear. Let rest 2 minutes before serving.
