Steps
1. Heat vegetable oil in a wok over medium-high heat until hot.
2. Add minced garlic and shallot; stir-fry until fragrant and lightly golden.
3. Add diced chicken and cook until no longer pink.
4. Push ingredients to the side, crack the egg into the wok, scramble until just set.
5. Add the cooked rice, breaking up any clumps, and stir-fry to combine everything evenly.
6. Pour in sweet soy sauce, soy sauce, and sambal oelek; stir well to evenly coat the rice.
7. Season with salt and white pepper to taste.
8. Continue stir-frying to allow rice to heat through and develop a slight smoky flavor from the wok.
9. Mix in sliced green onion just before turning off heat.
10. Serve hot, garnished with fried shallots and cucumber slices if desired.
