Steps

1. Rinse the rice under cold water until the water runs clear, then soak for 20 minutes. 2. In a pot, heat the vegetable oil over medium heat. Add the chopped onions and bell pepper; sauté until soft. 3. Stir in the chopped tomatoes, tomato paste, thyme, curry powder, salt, and pepper. Cook for about 5 minutes until the mixture thickens. 4. Add the soaked rice and stir to coat in the tomato mixture. 5. Pour in the vegetable broth or water and bring to a boil. 6. Reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed. 7. Fluff with a fork and serve hot, optionally garnished with additional bell peppers or fried plantains.
